We look forward to hosting our monthly pairing dinner in November. The season of cognac is upon us, its warming and soothing features are a perfect holiday beverage. As always, we offer an exceptional value with our 5 coursed pairing dinner, including 5 varieties of cognac and accompanying dishes prepared by Executive Chef, A.J. Jones and sous Chef, Jake Brown.

 What is Cognac?

Cognac is a variety of distilled brandy (alcoholic beverage) named after the town of Cognac in France.

Where is Cognac produced?

Cognac is produced in the wine-growing region surrounding the town from which it takes its name, in the French Departments of Charente and Charente-Maritime.  For a distilled brandy to bear the name Cognac, its production methods must meet certain requirements set by the Bureau National Interprofessional du Cognac (BNIC) .


First Course:  Augier , Oceanique

Spicy Tuna Roll, Furikake , Pickled Ginger, Soy-Wasabi Mayo

Second Course: Augier, Singuler 

Grilled Pear & Walnut Salad, Smoked Blue Cheese, White Balsamic Reduction 

Third Course: Marquis “Extra”

Stuffed Cipollini Onion, Amaretto, Sausage, Kohlrabi Puree

Fourth Course: Augier, Sauvage

Roasted Venison Rack, Smoked Tea Potatoes, Glazed Carrots, Orange Cranberry Relish

Fifth Course: Marquis “Fine”

Nougat Aux Fruit:  Almonds, Cherry, Spiced Pepitas, Sweet Potato Mousse
